Making Indian sweets at home could be tricky since most of these require perfect consistency of sugar syrup to obtain perfect texture of sweet dish. While some Indian sweets are little forgiving when it comes to syrup consistency (malpua, rasgulla, gulabjamun etc), the texture of batter/dough needs to be perfect for satisfactory results in such cases. For some sweets, the temperature is a deciding factor while some like laddoo need ‘tagar’, a most crucial ingredient to nail the texture and flavours, made by re crystallizing sugar syrup, by vigorously mixing it off flame, till it turns into a coarse powder.…

Dr Rajesh Khatwani, is a passionate cook and enthusiastic baker. Let me introduce Dr Khatwani, in his own words… “I am a practicing pediatrician in Ahmadabad. Wild life photography and cooking difficult dishes are two of my favorite hobbies. It started with cakes and kulfis—I learnt from my mother. I have tamed few of challenging dishes; Rasgullas, Sugar free Rasmalai ( Which won me 1st prize in male medicos cooking contest), Egg less Pineapple pastries (1st prize), Pizzas, Christmas cake and egg less baked caramel custard (on TV9 Gujarati ) and Khorak which was telecast on ETV Gujarati. Holi, the spring festival of India, is around the corner. With just few days remaining in the festival of colours, many people asked for the recipe of traditional Holi sweet of Sindhis, Gheear or the jumbo jalebi. For sindhis, Holi means going crazy over sweets like Praghree, Gheear, Malpura etc. The recipe of typical Sindhi sweet, Praghree, the crispy layered pastry stuffed with Khoya, is already shared here, while that of malpura is here Last year I tried making gheear too but my attempts went into vain, when the under- fermented batter refused to turn into slim pearly droplets that bind…

I often wonder, what it is that make certain food so evocative, decades later? The smell of besan being roasted, triggers the memories of my mother making Sindhi Kadhi on weekends. The sight of corn on the cob, being roasted on charcoal, reminds me of the monsoon evenings, when a lime with salt and chili powder rubbed over a hot corn on the cob, would turn it into a most delightful after- school snack. The luscious mulberries, takes my mind back to those vacation days, when me and my cousins would climb on the half wall to pluck the juicy…

Ghee, the clarified butter, a controversial ingredient in Indian kitchens, is often criticized by weight watchers and figure conscious people due to the calories it impart. But it’s hard to ignore the medicinal and healing qualities of pure ghee. The debate could go on, discussing the pros and cons of using Ghee, but then, I prefer using white butter and ghee for slathering the parathas, for my kid, as children would gain health benefits too, along with calories. Cow ghee is hands down winner when compared to buffalo ghee, in terms of texture, colour, fat content, and healing properties. So…

Summer being officially in, its time for School Vacation here in India. Vacation….sounds Music to my ears…No morning rush, no Tiffin worries and no studies-related stress. But then vacation do mean, keeping your little one, fruitfully occupied. Computer games, Television are good for just a limited period of time, though kids beg to differ on that. And it needs to be a real courageous Mother to let the kid play outdoors during afternoons, when Sun is all set (or rose to?) to make life miserable, with all its sultriness. So while mornings and evenings are good for some outdoor activities, afternoons are…

Oops it already started melting….. To begin with, it’s my Better Half’s Birthday today , So Happy Birthday Dear Hubby (Even though you dislike publicly displaying affection and all those mushy sentiments..still….). Then comes the rantings (Ahh that’s my favorite part of blogging..lol). It is a long Weekend here in India and me and kiddie were really looking forward to celebrate this day, since from past many months we hardly had got some FAMILY TIME to relax and enjoy just being together, chilling out with our kid, having fun roaming around, going on vacation…the desires are innumerable, the wishes, unending.
